MOUNTAIN MAN BREAKFAST
(serves 6 to 8)

1 lb bacon 1 onion, chopped 1 32oz bag O'Brien potatoes 12 eggs, stirred together 1/2 lbs grated cheddar cheese 1/2 lb pepper cheese, grated 1 jar salsa |
Dutch Oven knife - to cut onion, etc cheese grater (or buy grated cheese) Charcoal (or wood) Charcoal lighting device (Scouts don't use lighter fluid) |
Pre heat Dutch oven over hot charcoal or wood fire.
Cut bacon into small pieces and cook bacon and onion until clear.
Remove bacon and put aside for a short time. Do not drain bacon drippings.
Add O'Brien potatoes. Fry until golden brown.
Stir bacon mixture back in,
then add eggs.
Cover Dutch oven and transfer some of the coals to the lid.
Cook until eggs are almost solid.
Sprinkle with cheese and continue cooking until eggs are set and cheese melted.
Serve with salsa.
Geezer style -- add 1 tbs chili powder, 2 tsp red pepper, and 1 tsp tobasco sauce to egg mixture before cooking.
